These Milkshake cupcakes make me happy by just looking at them! I can’t imagine how happy I would be eating one… yummers.  Bakerella always brightens my day.
If only these cupcakes had zero calories and worked well with a wedding diet…hmmm…

Thanksgiving Baking!

So this is the second year in a row where I have been commissioned by my mother to bake the Thanksgiving pies.  My assignment: make a pumpkin pie, apple pie, and a specialty sumthin- my choice.  So I’m browsing through recipes trying to see which ones to use, and it is so hard to decide with all of the amazing goodness of options out there!

Here are my options for the apple:

“Apple pie without cheese is like a kiss without a squeeze!” Nolan tells me his grandpa used to say that… I really want to try this recipe just because of that quote. I mean- its gotta be great!

I’m a sucker for the crumbs on top of cobbler, so crumb pie sounds pretty awesome.

And this pie just makes me hungry looking at it. Minus the raisins… sorry raisins, but I’m not your biggest fan. Other than that, this pie looks to die for!

For the Pumpkin- the possibilities are endless. I mean look at this actual pumpkin “pie chart” from TasteSpotting:

They have twelve different pumpkin pie recipes to choose from! What?? I didn’t know pumpkin pie could be so complicated…

And I think I know what I’m doing for the specialty pie :) I’m a big fan of all things gooey and melty. So this Brownie Pecan Pie from Bakerella is sounding pretty darn good.  I’m excited to bake this, but ooober excited to eat it.

So pretty much I’m super excited about Thanksgiving.  Family, baking, and eating.  It doesn’t get much better!

But for now I have some serious decisions to make…

I’m in the middle of making these yummys Easter style.  Nolan and I made them once and they were amazing!  I’m using white chocolate and dying them Easter colors.  We’re getting together with some fam tomorrow to feast and celebrate the resurrection of Jesus!  I’m stoked.
I love Easter- I think it may be one of my favorite holidays, even though I tend to say that about every holiday when they come around!  I love the colors, the chocolate, the happiness and the egg hunts.
But truly, without Easter, my life would not have a purpose.
I have this joy and peace in my heart and soul because of this day.  Because of His love for me.  I can’t help but smile and tear up at the same time when I remember and reflect on the purpose of Easter and the significant shift in the universe that happened this day.  Too often I forget and get caught up in my own life.  My own agenda and selfish desires become my world.  I forget that there are 6.2 billion (or whatever we are up to now) other people living at this very moment and they are struggling.  Suffering.  And I’m not JUST talking about the starving children in Africa or the people struggling in Haiti right now.  I’m talking about my neighbors next door.  I’m talking about the person I serve coffee to in the mornings.  The person driving in the car next to you.  We are all so close, yet so disconnected.  Sometimes I feel the want and need to go away to a foreign land to lend a helping hand- but why do I have to go so far?  There are people all around me who are in need of a helping hand.   Although we have our homes and food here-we are all going through some sort of battle in one way or another.
So with all of that being said- I’m so thankful for Easter.  It is a reflection time.  A celebration time.  And it is reminding me to serve.  Get out of my own life and help a friend in need.  Because sometimes stepping outside of ourselves is more of a medicine for us than it is anyone else.

So thanks for listening to my cooking/ life reflection.  Happy early Easter!!
